I don’t know about you, but I’ve been snacking all day since spring break. I try to eat healthily, but that’s hard when you also love baking. I decided to make quarantine cookies! They’re just regular chocolate chip, but I made them in quarantine so… might as well call them quarantine cookies. I got the recipe from “The Insider’s Guide” (linked at the bottom of the page).
The first step is to combine 2 cups all-purpose flour, 1 tsp baking soda and 1 tsp of salt into a medium bowl and mix it all together.
Then take a mixing bowl and cream together 1 stick of butter (make sure it’s room temperature!!) and ¾ cup of granulated sugar.
Next, add in 1 cup of brown sugar.
Then add in 2 eggs and 1 ½ tsp of vanilla. Beat until they are incorporated. Make sure to scrape down the sides and mix again.
Add in the flour mixture and mix until the flour has disappeared.
Drop in an entire bag of chocolate chips and mix enough to combine them.
Cover your dough and put in the refrigerator for 30 minutes to an hour, depending on your patience.
Once your dough has been in the fridge long enough, take it out and put parchment paper on a baking tray. You can also set your oven to 375 degrees (Fahrenheit) at this time.
Roll the dough into little balls and line them up evenly on the tray. I was able to get 12 on there.
Once your oven is preheated (375 degrees), put your dough in for about 10 minutes. Not all ovens are the same and depending on how you like your cookies the time may differ… I had mine in for twelve minutes and they were a little crunchy around the edges.
Take your cookies out of the oven and let them sit for three minutes. Enjoy!
