The opening date for Rehearsals restaurant is uncertain, officials said Thursday.
The restaurant at 23rd Street and Virginia Avenue originally was scheduled to open the last week of March. Rehearsals doesn’t have a set opening date, said Kelli Keegan, director of food services.
“At this point I don’t want to guarantee a certain date,” Keegan said. “I will have better knowledge once I get the last couple of pieces to fall in to place, where we actually have furniture.”
Officials still are waiting for booths and chairs, Keegan said.
“Once we get everything in the restaurant, we want to have a soft open,” she said.
Soft openings will consist of inviting different organizations or groups in to the restaurant to sample the food.
“We’ll do some soft opens where we’re not actually open to the public, but inviting people in at certain times to show off,” Keegan said.
The full food menu will be served during soft openings.
“Soft openings are great because it allows employees, staff and the chef to get used to working in a new kitchen and a new space,” Keegan said.
The core staff has been hired, including the chef and manger, some supervisors, and a few people for the kitchen. Officials still are interested in hiring student employees, wait staff and runners, Keegan said.
“It’s a seven-day-a-week operation, so we’re definitely looking for more help,” she said.
Rehearsals is scheduled to be open from 11 a.m. to midnight, seven days a week.
