Along with the many tasks of a university president, President Henry started a vegetable garden since his term began in July.
Henry said he hopes that Sodexo can use a lot of the garden in their meals by this time next year.
“The herbs in the garden will be utilized for special dinners at OCU and in the caf on certain foods–most recently the pizza margherita,” Henry said.
A board of trustees member suggested Henry begin a garden at OCU when he said he had a large vegetable garden at home and would miss it when he moved on campus.
Henry found a plot of land that was owned by the United Methodist Center that wasn’t being used and received permission to use it, said Henry.
The garden is located behind the children’s theater and is visited by an assortment of birds, said Henry.
The garden consists of 10×10 plots and holds an assortment of herbs and vegetables, including: tomatoes, peppers, eggplants, sweet potatoes, sweet basil, parsley, rosemary and thyme, Henry said.
Since the start of the garden in July, officials had to do quite a bit of watering so the recent rainfall was greatly appreciated, said Henry.
Caroline Cotton, entertainment business sophomore, said the idea of fresh herbs and possibly vegetables in the café is a welcomed idea.
“It’s better for the students and even though students might not realize it, they are eating fresh, local and healthy, which is always environmentally friendly,” she said.
